Olive & Finch Executive Chef/Owner Mary Nguyen started her career with a stretch in finance before discovering her love and passion for food, launching her own catering company in Denver. Stints at the Beehive and Hapa Sushi (where Mary earned the distinction of being the only executive sushi chef in North America at the time) followed before Mary decided to strike out on her own, opening her acclaimed restaurant Parallel Seventeen in 2005. Her own personal journey to healthful and affordable eating led her in 2015 to open Olive & Finch in Denver’s vibrant Uptown neighborhood, whose success laid the groundwork for the expanded and enhanced Olive & Finch in Cherry Creek, opened in early 2017. Mary’s a busy working wife and mother of twin daughters and can be found most days on the line at either location of O&F or hard at work in her own kitchen at home, testing and tasting recipes while planning her next projects.
