Brendan was born in rural central Illinois, to parents that taught him sustainability through land management, hunting & farming, and in turn sparked an interest in cooking that has come full circle back to a focus on sustainability in modern restaurants. Bailey moved to Denver in 2007 to take small town soul to a, soon to be, rapidly expanding population, restaurant scene and new melting pot of the Midwest. Brendan cut his teeth at local restaurants while discovering his own voice in the Denver Culinary Choir. He has worked with Edible Beats company for over 5 years and embraced their focus on sustainability through the support of the community, farmers and producers that make Colorado a unique place to operate restaurants.
