A Taste of the Yucatán Peninsula

In the dazzling area separating the Caribbean Sea from the Gulf of Mexico, the Yucatán Peninsula is a melting pot of flavor: start with a base of Mayan and Caribbean ingredients, then add Spanish and Arab foods that came with Mexican conquest, and later, Asian and Lebanese flavors. The resulting gastronomy is one of the most sophisticated and delicious in the world.

This hands-on workshop is a rare opportunity to experience an ancient dish, presented by the brilliant, young rising star of Mexican gastronomy, chef Regina Escalante Bush. You’ll learn the methods and history of cochinita and understand why Regina’s hometown of Mérida has made an impact on the international culinary scene.
