Fermentation is Everywhere!

Fermentation revivalist Sandor Katz and local chef Adam Branz are pairing up for a special demonstration that will inspire you to experiment with fermentation! Sandor has educated hundreds of people around the globe, and has helped to catalyze a broad revival of the fermentation arts.

Through hands-on demonstration and instruction, you’ll explore the possibilities of vegetable fermentation and learn how to execute a basic ferment that can be modified in your home with different variations through the seasons. Enjoy a plate created by chef Branz highlighting the tantalizing flavors and complexities of fermented foods.

The Kitchen Counter is a public stage that is visible to all, to experience the tastes and story of Slow Food. A ticket at the kitchen counter gets you a front row seat to engage directly with the chefs.
